I'm playing with Ashe mostly. Kind of easy to learn, but very easy to gank too (last game i played i hated Evelynn with a passion - especially since she was accompanied with others that could stun and i was pretty much stunned till death).
Just unlocked Renekton aswell, he's quite fun to play.
Ashe is all about when to use what tbh and even more important to get the right items out. +attack dmg, +crit, +attack speed +movement speed Usually after boots I go for Infinity Edge, then Phantom Dancer and then either Black Cleaver or Bloodthirster. If i'm well fed i might go for a Trinity Force too.
As for the skills, Scout can be very powerful to avoid ganks (i failed miserably last night), volley is what you usually go for (creeps or just hit and run your opponents in your lane) and the freezing arrow is only to be used when your opponent tries to run off (usually after getting ur ulti in the face).
She's awesome for assists if you aim well with the ulti. I very often stun opponents half way across the map for allies to kill, stun next to turrets (especially early on), or simply for the kill as they're running away (a certain Teemo will hate me for this).
I play ashe a lot. one of my mains. ECA is hard especially at angles. Straight lines are much easier, Hold off until there running directly away from or towards your champion and then shoot it. Ashe has insane late game damage with auto attacks and volley spam, just have to stay well back in team fights and Run speed is win. flash and ghost with boots of swiftness and a PD should keep your deaths down.
Vayne is insane when you get the hang of her. Was having average games until i really looked at how her ultimate works and worked out a better build. got like 10-2-11 in my last game last night.
dealing damage with Ashe is mostly about the items you get. I usually get about 850 dmg crits with around 2.8 attack speed. Add the slow to it and the result can be catastrophic for people thinking Ashe is weak. Movement speed is very important too. I usually go for Infinity Edge, Phantom Dancer, Black Cleaver and then it depends. I can get a second Phantom Dancer (opponents rarely keep up after that) and then go for a Bloodthirster. Or go for a Bloodthirster before the second Phantom Dancer.
As EmilB said, it's very much about positioning. Vayne can be tricky to play against as Ashe. You need lots of mobility to keep be effective against her.

If I desperately need health with Ashe, I can annoy the others by using Warmog's Armor.
Guardian Angel isn't such a good option cause I mostly die when ganked, very rarely in team fights. And if i'm ganked, I'll die again anyway.
If you have bad positioning, no matter what items you have, you're screwed. But playing 1 on 1 with someone, an Ashe with my build can kill almost everyone (not by blindly charging in however).
One thing i liked was ganking someone squishy trying to backdoor. Arrow while in the base and teleport to the minions near the enemy champion. Stun is for 3.5 sec for hitting from such a long range. Slow/volley and there's no escape.
for survival as ashe, imo best item is banshee.
MR and single spell block is VERY affective against any chain nuker, earlyer catalyst can help u haras with voley and farm ur lane.
ofcorse item choices will depend on oposing team setup, game progression, farm, and filling gaps within team (whether they need ur frost longer or need u to go flat dmg in bigining)
so overall i prefer going banshee ASAP after initial dmg
i almost never had a game where i needed QSS with any char
the most extreme game would be with oponents have 4 or 5 aoe crowd control, though they would be realy bad and literaly waste all 5 stuns to kill 2 or 3 while rest of us whipe them out after they finished their skills
besides its useless if u can get banshee and having 1 guy with cleanse in the team. thats just item of choice i guess
uh PD was made for xin. he needs it, as far as im concerned its his bread and butter. deppending if ur jungling or not and how many ganks you get then brutalizer or BF and build into IE. phage is a monster hybrid early game item 2. after PD and IE for me im pretty much straight into banshees.
i ususaly jungle him and my build is:
cloth arm -> zeal -> Boots -> BF -> Bezerkers -> PD -> IE ->Banshees and then an item depending on opposition. usually a defensive item if im being targeted and have bad tanks or another PD
